FUTURELIFEÂŽ Baked Raspberry & Banana - Nut Oat Cups
INGREDIENTS:
3 cups FUTURELIFEÂŽ Smart Instant Oats with Ancient Grains Honey FlavourÂ
1½ cups Low-fat milk
2 Ripe bananas, mashed (about ž cup)
â cup Brown sugar
2 Large eggs, lightly beaten
1 tsp Baking powder
1 tsp Ground cinnamon
1 tsp Vanilla extract
½ tsp Salt
1 cup Fresh blueberries
½ cup Cashews, toasted & choppedÂ
To serve: Caramel sauce and fresh berries

METHOD:
- Preheat the oven to 180°C, then coat a muffin tin with cooking spray and set aside.Â
- Combine oats, milk, bananas, brown sugar, eggs, baking powder, cinnamon, vanilla and salt in a large bowl, then fold in the raspberries and pecans.
- Divide the mixture evenly between the muffin cups (about â cup each).Â
- Bake for 25 - 30 minutes, until a toothpick inserted into the centre comes out clean.Â
- Cool in the pan for 10 minutes, then turn out onto a wire rack and continue to cool.Â
- Add some caramel sauce, toasted cashew nuts and fresh berries on top of each muffin.Â
- Serve warm or at room temperature.
